CACAO HEMP LOAF

CACAO HEMP LOAF

In collaboration with fair

Recipe:
1 cup coconut sugar
3/4 cup cacao powder
1 tsp ground coffee (optional)
1 cup boiling water

1/2 cup coconut yoghurt
2 very ripe bananas
1/2 cup avocado oil (or other neutral flavoured oil)
2 tbsp chia seeds mixed with 5 tbsp water
1 tsp vanila

1 cup GF flour @bobsredmill
1 cup brown rice flour
1 cup buckwheat flour
1/2 cup hemp seeds @fair
2 tsp baking powder
1 tsp baking soda

chocolate chips (optional)

Preheat oven to 180c and grease/line a loaf tin.
In a bowl, combine the coconut sugar, cacao powder and coffee, pour over the boiling water and stir until the sugar dissolves. Now pour the mix into a blender, along with the coconut yoghurt, bananas, oil, chia eggs and vanilla. blend on low until it just combines and the banana is incorporated. In another bowl combine all of the dry ingredients. Add the wet mix to the dry and mix thoroughly. Pour into prepared loaf tin and bake for 40 minutes, or until a skewer inserted comes out clean. If the top of the loaf starts to brown quickly cover with aluminium foil.
