APPLE CRUMBLE MUFFINS

APPLE CRUMBLE MUFFINS

RECIPE

1 cup almond meal

1 cup gluten free flour (I use Bob’s red mill)

3/4 cup coconut sugar

1 chia egg (1 tbsp chia seeds with 3 tbsp water, mixed)

2 mashed bananas

1 tbsp oil

2 tbsp almond mylk (more if necessary)

Stewed apple:

1 Granny Smith apple diced

1 Pink Lady apple diced

2 tbsp maple syrup

1/2 tsp cinnamon

splash water

Crumble:

1/2 cup instant cooking oats

2 tbsp coconut sugar

1 tbsp GF flour

2 tbsp desiccated coconut

2 tbsp vegan butter of coconut oil

1/2 tsp cinnamon

1/4 tsp all spice

Start by preheating your oven to 180C.

Place all of the stewed apple ingredients in a saucepan and simmer over medium heat for 10 minutes, the apple should be slightly tender and a thick sauce should form.

To make the crumble, rub the butter into the remaining crumble ingredients with your fingertips.

To make the muffins, combine the dry ingredients in a bowl then add in the wet ingredients, stir to combine, the mix should be thick and slowly drip off the spoon. Add the mix to a muffin tray lined with paper muffin liners, fill 3/4 way to the top. Top with 2 tbsp of stewed apple and 2 tbsp of crumble. Bake for 15 - 20 minutes, or until a skewer inserted comes out clean.
