CHOC CARAMEL SANDWICH COOKIES

Recipe:

Chocolate biscuits:

1/3 cup coconut oil melted
3 tbsp almond butter
1/2 cup coconut sugar
1 tsp vanilla extract
2 tbsp almond mylk
1 cup brown rice flour
2/3 cup cacao
1 tsp baking powder
1/2 tsp salt
1/3 cup chocolate chips

Caramel:

1/2 cup coconut sugar
1/4 cup coconut mylk
3 medjool dates pitted
1/3 cup cashews soaked
2 tbsp coconut oil

To make the biscuits preheat oven to 180c

In a bowl combine all of the wet ingredients and mix until incorporated. In a seperate bowl combine the dry ingredients, add the wet to the dry and mix until it forms a dough, Measure out 1 tbsp sized balls of dough, transfer to a lined baking tray and flatten the dough with your fingers. Bake for 12 minutes or until lightly coloured.

Now make the caramel filling, in a saucepan over medium heat add the coconut sugar, mylk and dates, bring to the boil, then simmer for 3 minutes, allow to cool slightly before transferring to a blender, add the remaining ingredients and blend until really smooth and creamy. Allow to set in the fridge before sandwiching cookies.

Match up the cookies to form a pair and sandwich with the caramel. DONE!
