CRISPY RED CURRY TOFU TACOS

CRISPY RED CURRY TOFU TACOS

RECIPE:

250g firm tofu

3 tbsp spelt flour

salt & pepper

2 tbsp olive oil

TOFU COATING:

2 tbsp red curry paste

2 tbsp coconut sugar

Juice 1 lime

2 tbsp water

Method

Preheat oven 200C

Slice the tofu into thin battens, place in a bowl along with the flour and S+P. Top the bowl with a plate and shake to coat the tofu. Arrange the tofu on a lined baking tray and brush with olive oil to coat all sides. Bake for 15 minutes or until golden and crispy. Meanwhile in a large bowl mix together the red curry coating ingredients. Once tofu is crispy, add to the curry mix and toss to evenly coat. Bake for a further 15 minutes. Assemble the tacos with salad and chipotle aioli.

Salad

1/2 red cabbage thinly sliced

1/2 red onion thinly sliced

Large handful of kale roughly chopped

1/2 tsp sesame oil

Juice 1 lime

1 tbsp sesame seeds

Place all ingredients in a bowl and massage with your hands.

Dressing: Store bought or homemade:

1 cup vegan mayonnaise

1 tsp chille powder or hot sauce

Juice 1 lime

Salt + Pepper

Mix together
